Far Eastern pie

I haven’t blogged about food in a while – there seems to have been scarce enough time to cook it lately. But the need to use the spinach picked from my garden plot seemed like a good enough reason for far eastern pie:
The mince is cooked with turmeric, coriander, chili, cinnamon and garlic, wilted and chopped spinach and some lemon juice added…. while the top is dessicated coconut cooked in milk (oat milk in our case), the coconut left to one side and rice flour added to make the sauce. All layered up and in the oven for 45 minutes.

We both like it, but probably more so with a mash potato top than the sauce, so it gets a rating of OK from us.
