Lime Sea Bass

I was wandering round BBC food where I cam across a recipe for Barbecued snapper with mushroom stuffing, a recipe from the Mushroom bureau.

The supermarket didn’t have any Red Snapper, so I bought sea bass. The stuffing has closed cup and chestnut mushrooms, lime, shallot, and I also put coriander in it.

It was really nice.

I like fish a lot and would have it 2 or 3 times a week except 2 sea bass cost over £8 – ouch! And other fresh fish isn’t cheap… but then better that that trawler caught, damaging the environment.

We had it with cous cous and green beans.

Anyway, we both liked it, and only the task of removing bones as we ate caused it to slip from subzero to cool.
